medicine said that hundreds of years ago. Organic farmers Dela and Tony Ends
have made a commitment to it in their business at Scotch Hill Farm in southern
Wisconsin for 16 years. They'll share writings from researchers and doctors on
how the foods you eat and cook can prevent or cause heart disease, cancer, even
conditions of mental acuity into your old age. And they'll relate this to the
foods they grow and sell in subscriptions by certified organic practices and

Class Description: We hear a lot about "sustainability." Mostly,
what people tell us concerns what is not sustainable, what is ruining the
Earth, endangering health and safety, eroding food security and negatively
changing climate. At Scotch Hill Farm, Tony and Dela Ends, have worked for 16
years to become a self-sustaining farm. From their experiences and studies,
they'll share a positive formula for sustainability that they believe can help

MEET THE CHEFS
Chef Paul Messinais a
graduate of the Cooking
and Hospitality Institute of Chicago. Chef Paul is 100% Sicilian and
specializes in Italian and Mediterranean cuisine. He has been teaching
in and
around the Chicago area for the last 5 years and has worked extensively
as a
caterer, and personal executive chef. He has worked with a number of
large
corporations, was chosen as one of the corporate chefs for the US Open
and was
a personal chef to the Pritzker family. His classes emphasize classic
techniques and methods critical for any successful home chef. Chef
Pauls
passion, enthusiasm and humor make his classes an enjoyable and
entertaining
experience. He is in the process of creating his first cookbook.
Chef Matt Zagorskiis an
award-winning
chef and 2009 National Pie Champion. He has been teaching culinary
classes
around the Chicago area for the last 6 years and has worked extensively
as a
caterer and personal chef. He has conducted classes and events for many
large
corporations including Discover Card, Pampered Chef and Condell
Hospitals. His
stories, cooking philosophies and recipes have been featured in numerous
newspaper articles around the US. Among his television appearances, Chef
Matt
was a featured chef on the Food Networks successful Food Network Challenge
series (September 2008). Chef Matt is known for his sense of humor,
easily duplicated
recipes and his ability to make the even most complicated culinary
techniques
accessible to the home chef. His warmth, enthusiasm and high energy
always make
his classes a memorable and exciting event. Chef Matt is a graduate of
Kendall
College.
Chef Vee Buranasiri
is a
graduate of Kendall College Culinary School. Chef Vee has worked in
the food and wine industry for almost 20 years. In the early years of
his career he worked in restaurants, hotels and catering businesses.
Currently a personal chef working for 5 families in the Chicago land
area, Chef Vee also works part time as wine buyer and chef for a small
wine
market called Cellar Gate in Highwood.
ABOUT OUR CLASSES
Recipes and Food Tastings:All
classes include food samples and recipe packs, unless otherwise
indicated. Menu
items are subject to change due to the availability of ingredients.
Registration and Waivers: You can
sign
up for a class by telephone or in-person at our store but
due to
enrollment limitations, we cannot hold a place for you in a class
without
payment. Since most of our classes are hands-on and most will require
the use
of knives, hot ovens and other potentially dangerous equipment, all
class
attendees are required to sign a waiver. No exceptions.
Cancellations Policy:If you are
unable to attend a class, you must notify us at least 1 week in
advance to
receive a full refund. After that time, no refunds will be given. No
exceptions. If you cannot attend a class you have paid for, you may send
someone else in your place " just give us a call ahead of time. At the
discretion of Dominics Kitchen Store, classes may be canceled or
rescheduled
due to inclement weather or the illness of the instructor. In these
instances,
you will be given the option to attend the rescheduled class, apply your
fee to
another class, or receive a full refund. A class may be canceled due to
lack of
enrollment. In this case, you will be notified in advance and given the
option
of applying your fee to another class or receiving a full refund.
